Pomegranate Salsa is a light and tangy salsa served best with toasted pita bread.
Ingredients Required:
2 cups thickly chopped green bell pepper or one large pepper
4 cups thickly chopped ripe tomatoes
1½ cups thickly chopped onion
½ cup softened parsley Juice of one lime
1 tsp. minced garlic
1 tsp. ground hot chili or as per taste
¼ cup fresh pomegranate juice
1½ tsp. sea salt
1 tsp. freshly ground black pepper
½-cup pomegranate arils
The Method:
Put bell pepper, tomatoes, onion, parsley, lime-juice, garlic, and chili in the mixer or food processor. Pulse 6 times. The mixture should be uniform. Pour out salsa in a bowl. Put in the pomegranate juice and add seasonings. Mix the pomegranate arils well and serve.
